Bunny Buddies {Easter Snack}

I had no idea there was another name for this snack other than muddy buddies until I talked with my friend Nicole trying to come up with a name for this post.  I’ve always known them as muddy buddies but apparently some people call them puppy chow.  I won’t tell you don’t know why that name seems gross to me but it does.  Whatever you call it chex mix cereal coated in melted chocolate and powdered sugar with whatever your little heart desires mixed in is just a snack that takes me back to my elementary school days.

I’ve made these bad boys with all kinds of different combinations: peanut butter and chocolate, chocolate and peppermint, chocolate and raspberry…and now I really wish I’d been a blogger back in my teen years because y’all would love those recipes just as much as you’re about to love this one.

In between scarfing down handfuls of this stuff as a kid and counting down the days until my birthday I always loved Easter.  Probably more than Christmas.  Because I was weird like that.  Maybe it was the Cadbury eggs that no one else liked so I didn’t have to share or the Easter Egg Hunt at our family church or the pretty dresses or the promise of spring but Easter was always a holiday that did it for me.

Every year I’d beg my mom to let me leave an Easter snack out for the Easter Bunny.  She’d kind of give me a funny look, scrounge around in the fridge for some carrots or lettuce, and toss it onto the plate for the guy {or girl…}.  I always felt bad that the Easter Bunny wasn’t getting some yummy treats like cookies.  So I’m placating 10-year-old me with these Bunny Buddies and bringing a little joy to your Easter Bunny days.  Because you might just enjoy this a little more than those carrots and lettuce leaves 😉

This was my first time making these guys with white chocolate and let me just say that white chocolate can be a real pain to work with.  It has a much lower melting point than chocolate so if you’re a lazy chocolate melter like me and do it in in the microwave then watch it verrrry carefully so it doesn’t seize up.  Low and slow on that chocolate leaves you with this…

Serves 8
A fun and easy Easter snack for your kiddos to enjoy or leave for the Easter Bunny!

Ingredients
  1. 4 cups Chex Mix rice cereal
  2. 1 cup white chocolate chips
  3. 1 cup mini marshmallows
  4. Sprinkles, optional
Instructions
  1. In a microwave safe bowl melt chocolate chips on medium power for 1 minute, stirring every 15 seconds until chocolate is completely melted, careful not to burn.*
  2. Pour melted chocolate over rice cereal and stir carefully with a spatula until cereal is completely coated.
  3. Lay mixture on a baking sheet and spread out in an even layer. While chocolate is still wet sprinkle with mini marshmallows and sprinkles and allow to set for about an hour or until chocolate is set.
Notes
  1. *White chocolate melts at a much lower temperature than milk chocolate so melt it slowly on low power to avoid burning or seizing

    We make a version of this at Christmas, and I’ve always just called it snack mix because I hate the Puppy Chow name. 🙂 My kids will love adding the marshmallows and sprinkles for an Easter version of the treat.
