Fast and Easy Carmelitas Recipe

- 1½ c butter, melted (3 sticks)
- 1½ c packed brown sugar
- 2 tbsp vanilla extract
- 2 cup whole wheat or all purpose flour
- 2 cups old fashioned oats
- 2 tsp baking soda
- ½ tsp salt
- 2 cups chocolate chips
- 1 jar caramel sauce
- Pre-heat oven to 350
- Melt butter and add to a mixing bowl
- Add brown sugar and vanilla extract, and mix until blended
- Add flour, oats, baking soda, and salt, and mix well
- Put half of mixture in greased 9.5x11 baking dish. Spread and press until it evenly covers the bottom
- Bake at 350 for 10 minutes to set
- Generously drizzle caramel over crust (about 1 cup)
- Sprinkle chocolate chips evenly across baked oat crust and caramel
- Sprinkle remaining oat crust on top
- Bake at 350 for 15-20 minutes, until edges slightly browned
- Cool before cutting and serving
