Sparkling Raspberry Lemonade

Several weeks ago I made the incredibly brave {i.e. crazy} decision to move five states away to live with friends.  I packed my car full of everything I could fit and headed out on a two day journey that ended with my broken down car being sold for junk.  To say it was an adventure would be a very big understatement.  It also happened to be a week before my mom’s birthday and a month before Mother’s Day.  Both of which have me feeling a little homesick.

Usually when I’m homesick I bake.  But this time I found myself wanting to whip up some of my mom’s favorites.  Peanut butter cupcakes, her favorite homemade pizza crust, and this sparkling raspberry lemonade are what’s gotten me through the week.  Before we know it I’ll be sending them foodie care packages.  Not that my new roommates are complaining about all the yummy food in the house.  And I’m pretty sure my family wouldn’t either if they suddenly found food in their mailbox come to think of it.

This drink takes me back to the year I took my mom out for a fancy Mother’s Day brunch in Arlington, Virginia.  They served the BEST punch there in lots of different flavors.  Since then I’ve made it a couple times with or without alcohol and it’s great either way.  Light, refreshing, and fruity.  Plus frozen fruit makes the best garnish for this.

I’m not a fan of tiny seeds that go hand in hand with fruits like raspberries and strawberries but if you’re a fan then I think muddling some raspberries and adding them to the party will take this drink to the next level.  I’ve made this with orange juice, raspberry lemonade, and limeade but I can see it being beyond delicious with whatever your favorite flavor of lemonade or juice is.

This recipe is a fun mocktail suitable for kids and parents but if you want to take this drink into a grown up realm then add in your favorite sweet moscato for a cocktail fit for a queen.  Or for the best mom ever on Mother’s Day.  Serve with your favorite brunch recipes and treat mom to breakfast in bed on her special day!

Sparkling Raspberry Lemonade

Ingredients
  1. 6 medium lemons
  2. 3/4 cup sugar, divided
  3. 2 cups frozen raspberries, thawed
  4. 2 L Sprite
Instructions
  1. Combine 1/4 cup sugar with 1 cup raspberries, mash gently with a potato masher, and let sit for 10 minutes.
  2. Juice all 6 lemons and pour through a strainer to remove seeds and pulp.
  3. Add to a pitcher with remaining 1/2 cup sugar.
  4. Push macerated raspberries through a strainer with a rubber spatula or the back of a spoon to extract all the juice and add to pitcher.
  5. Add 2 L of Sprite and stir to combine.
  6. Serve chilled and garnish with frozen raspberries.

    Where is the link for the ‘Sparking Raspberry Lemonade’ receipe? I don’t seem to see it – I see the one for the pizza crust but not the lemonade and it sound real good!

    I’m not sure if I am missing something or not but there is no actual recipe for this drink given. It looks and sounds wonderful and I actually have lemons in the house right now. Don’t have raspberries, but a lot of black berries which would probably work too. Would love to give this a try but I need help finding the recipe. Tried clicking on a few of the pictures, but that only gave me–pictures! Thank you for your help.
