Summer Snack: Peanut Butter Banana Rollups

Here’s a great snack or lunch idea that’s quick, easy, and very healthy! The inspiration for this came from this post at New Nostalgia. All my banana-loving kids enjoyed them. 

Assemble each banana rollup with the following:

  • 1 Tortilla
  • About 3 tbsp peanut butter
  • 1 medium banana
  • 1 tbsp chia seed (or wheat germ, flax meal, sprinkles, or mini chocolate chips)
 
You can serve them cut in half like little burritos or slice them into little discs for snacks.
 
Enjoy!
