Poppyseed Dressing and Dessert Topping

I recently tried something different for dinner and dessert to go along with the abundant strawberries we brought home from the store.

It was good. I must share.

Initially I made the dressing for a strawberry and greens salad. I didn’t have the normal poppyseed dressing ingredients on hand, so I improvised.

The dressing was pretty good on the salad but it was AMAZING as a dessert topping in place of whipped cream.

Next time, I’ll make the salad dressing with a little less honey and then add a couple of teaspoons of honey before putting it on the berries for dessert. Here are the recipes adjusted for that little discovery.

Creamy Poppyseed Salad Dressing

  • 1 cup plain greek yogurt
  • 1 tbsp honey
  • 1 tbsp lemon
  • 1 tbsp poppy seeds
Mix well and apply to salad and stir until thinly coated. My kids LOVED this salad and ate all the greens!

Sweet Poppyseed Dessert Topping

  • 1 cup plain greek yogurt
  • 2-3 tbsp honey
  • 1 tbsp lemon
  • 1 tbsp poppy seeds
Mix well. Keep chilled until ready to use. Great on top of a cup of berries or as a replacement for whipped cream in shortcake desserts.

You could also just, you know, eat it by the spoonful. I won’t tell.
